During the last years, they have been focusing on developing the traditional wine making processes with almost no use of machines, this way producing the, so called, Natural Wines.
They comply with the Bioculture prinicipals of organic cultivation according to the Greek Organization of Organic Product Certifications (DIO), in both the vineyards and the winery.
The traditional wine stone press (patitiri) holds a dominant position in the estate and its use is not limited to decoration, but also to production.
All procedures are taking place with respect towards the environment.
The new modern establishment at Profitis Ilias of Raches in Ikaria, was inaugurated in September 2007 and coincided with the 1st International Conference about the Archeology of Wine that took place in Ikaria in co-operation with the University of Cambridge.
This event was unique for its kind, as 28 academics from universities all over the world presented original papers, analyzed and interpreted the advancement of the ancient wine making, as well as the customs, the traditions and the ways of producing and storing wine.
During the conference, participants visited the winery and recognized its valuable contribution to the preservation of a primitive vinification method.
This conference constituted a new beginning for Ikaria in the world of wine, as the two unique features of the island emerged from both wine making techniques, the buried amphoras and the sifouni (traditional pumping utensil of wine).
The international distinctions in competitions and the reviews all over the world contributed to the recognition of Ikaria and its wine. The future development of the winery will be supported by the children of the family, the new generation of the Estate, Konstantinos, winemaker, who studied in Bordeaux, and the daughter Eftychia, with studies in marketing and management in Nice of France.
