In these private vineyards of a total 3,5 ha area, the main varieties cultivated are Agiorgitiko, Syrah, Cabernet and Merlot.
The last few years though the winery also produces white wine of exceptional quality from Chardonnay, Sauvignon Blanc and Assyrtiko varieties.
In cooperation with affiliated viticulturists, following the strict rules of the winemaking industry, they produce high quality wine at very low yields per hectare (200-600 kg per 0.1 ha).
The winery operation is based on non-intensive agriculture, with zero fertilization and zero watering. During vinification, they handle each vineyard individually so as to give wines the uniqueness of each terroir’s character.
In this way the consumer can learn and explore each area of the vineyard zone on the wine map. Furthermore, the wines of Aivali Estate are not stabilized and filtered so as to retain their authenticity and character.
All wines are exported to Germany, Switzerland, Canada, United States and Cyprus.
