Our philosophy: Creation of well-balanced vineyards is imperative for the production of high quality wines. For this reason we cultivate our vineyards organically.
Vinification Process: Cryo-extraction (skin contact) at 12-14oC for 3 days, fermentation at 25-28o
Ageing: In French and American 225 l oak barrels for 14 months
Tasting notes: Deep cherry color, nose of cherries, small red berries, dry tomato, slightly earthy notes, the typical sweat and complex aromas of Xinomavro.
Mouth feeling of fruits and earthy notes, well combined with mature tannins and nice acidity
