In the winery
Before a gentle extraction, the must stays in contact with the skins for 24 hours. Some days before the end of the slow fermentation, which happens at low temperatures, the tank valves are closed, so that the produced CO2 can be preserved. When the desirable balance between grape sugars and alcohol is achieved, the fermentation is terminated by chilling. The wine rests on its lees for about 3 weeks.
Characteristics
Pale red color with bluish hues. Intense aromas of red fruits (strawberry, raspberry) and some spices. Sweet yet refreshing on the palate. The fruity aftertaste, paired with elegant bubbles, creates a vibrant sense in the mouth. Food pairings: chocolate desserts.
