In the winery
Gentle extraction and clarification of the must followed by slow fermentation at low temperatures. In order to maintain the produced CO2 the tank valves are closed before the end of the fermentation. Instant chilling terminates the procedure when the balance between the grape sugars and the alcohol is right. The wine rests on its lees for about three weeks.
Characteristics
Pale yellow green colour. Intense aromas of green apple, pear, exotic fruits and some muscat notes. Very refreshing and vibrant in the mouth. Fine bubbles create a playful sense that is completed by the sweet, clear aftertaste. Food pairings: fruits salad, creamy desserts.
