Every variety is vinified separately. Fermentation in small stainless steel tanks at low temperature of Malagouzia and Asyrtiko must, 3 months on fine lees.
The Chardonnay must is fermented in 300 litters oak barrels and stays 4 months in total. The final blend stays in a stainless steel tank for 3 weeks before bottling. Ageing Potential
