Gavalas katsano White Dry WineGavalas Katsano, is exquisite wine is the result of George Gavalas’ love and devotion to wine-making and his continuous effort to revive the rare, indigenous grape varieties of Santorini. The harvest commences in early August so that the grapes may be collected before they are fully ripe. When the grapes reach the desired degree of maturation (14-15 Be) they are carefully picked and are sun-dried on terraces for approximately 10-15 days. The small quantity of juice which is produced has a high content of sugar- 10 kgs of grapes produce 1 kg of Vinsanto wine. The fermentation continues almost until Christmas. This wine fills the chalices of the orthodox churches, used for the Holy Communion. It canbe best enjoyed chilled at 6-8oC, as a dessert wine. Vinsanto is bottled in limited quantities.

Gaia Asssyrtiko Wild Ferment White Dry WineASSYRTIKO BY GAIA-WILD FERMENT The Assyrtiko grape from the upland vineyard of Pyrgos is more aromatic than the Assyrtiko from the other parts of Santorini Island. After undergoing the 12-hour skin contact process at around 10οC, the grape must is placed in small 1.000 litre INOX tanks and in new 225lt French and American oak barrels.This wine has slight citrus aromas well-combined with elegant oak notes, a rich mouth fell, crispy acidity, intense mineral flavours and a long finish. Enjoy this wine with seafood, fatty fish, lamb and poultry at 8o-10o C. Keep the wine for 2-3 years under proper cellar conditions and it will undergo profound changes. Gaia Thalassitis Oak Fermented White Dry WineTHALASSITIS OAK FERMENTED is produced by fermenting and ageing Santorini’s Assyrtiko grape in oak barrels. The fermentation is carried out in 225lt new French oak. After fermentation, the young wine is aged “sur lie” (on lees) in the same casks for 4-5 months. During this period yeast lees are once a week put into suspension by stirring (bâttonage).Is a well-structured wine with mineral flavours, well-combined with nuances of wood, vanilla, incense and acacia flowers. Enjoy it with fatty fish, lamb and poultry at 8o-10o C. If you keep the wine for 5-6 years under proper cellar conditions, it continues to evolve in a more composite form. This must is then placed in old casks to undergo fermentation which stops once the alcohol level reaches 13% to 14%, thus giving us a Natural Sweet Wine. The wine is then left to age in the fermentation so it can acquire its deep honey color and complex aromas. Vinsanto by Gaia is bottled without any fining or filtration. Enjoy this rare wine at 6-8oC with a beautiful dark chocolate dessert or cellar it for future enjoyment. Only some 2.500 bottles of 500ml are produced each vintage.

Finally, the wine is bottled 36 months after the harvest. The aromatic complexity in the nose and mouth is impressive. The aromas alternately coming out are those of dark fruit, chocolate, pipe tobacco. What is most interesting is the fact that the nose of the wine developswhile in the glass, and this is evidence of the wines’ elaborate fullness. The aftertaste is sweet and long lasting, as expected of a good red wine. Transfer into a pitcher before serving. As all aged wines it needs time to breathe. Ideal serving temperature: 17-18°C.
